Cima is a plant in the turnip family that produces edible leaves and a 12-14 inch tall stem with a small broccoli-like head. "Sessantina" means 60 days, but we usually find it's ready to eat in 35-40 days.
It can be grown easily from direct seeding in spring, summer, and fall. Succession plant weekly for continuous harvest. Cima has a slightly bitter, slightly sweet flavor. It is used as a side dish, or with a short pasta such as Orechiette.
