Riso Carena Carnaroli rice is used in high cuisine. It will remain intact during boiling, then have a firm interior as well as a tender exterior that absorbs sauce. Carnaroli grains remain well separated after cooking so in Italy it is the preferred choice for rice salads and creamy risottos with whole grains.
Carnaroli contains starch that is rich in amylose, allowing it to absorb sauce better than Arborio rice.
